I finally jumped on the kale chip bandwagon. I’m not exactly sure what took me so long, except that I never quite found a recipe that was perfect and easy — I think I made it more complicated than it needs to be, and they sort of never came out perfectly… until now. It is so simple, so quick, and such a great way to get your kids to get their greens. Both my kids devour the whole bowl every time I make it. I’m definitely making this a new everyday snack in our house!
I found this recipe, and made my own variation:
- kale, rinsed and dried
- olive oil
Preheat oven to 375 degrees. Tear the kale into bite size pieces, making sure to completely remove the thick center stalk. Lay kale pieces flat on a baking sheet. Drizzle with about a tablespoon of olive oil, cover in salt. Using your hands mix it all around so that all of the pieces are covered in the olive oil and salt. Put in the oven for 11 mins. Enjoy!
